This is a quick & easy meal for weeknights when time is short, or weekends when you don’t want to put much effort into cooking. These pork chops will retain their juices which will make them extra delicious. I like to use my handy electric skillet so the temperature stays constant and it has plenty of room. I could cook 6 at a time if the occasion arises.
If you don’t have an electric skillet, keep your stovetop on medium heat, but preheat it so you will get a sizzle when you add the meat. I usually only make 1 pork chop per person, because these are rather thick. But if you have someone with a big appetite in your family, you can make as many as you need.
It hardly needs a recipe since it has very few ingredients. I use equal parts of the olive oil and Dijon, and enough flour to coat both sides, with a little extra oil for cooking in. So you can make a little or make a lot. This recipe is for 2 people but it can easily be doubled or tripled if you want to make more.
- 2 bone-in ¾” loin pork chops
- 2 T. olive oil
- 2 T. Dijon mustard
- ½ cup flour
- Salt & pepper
- Thoroughly wash the pork chops to remove any grit or bone fragments.
- Dry them off and season both sides with salt & pepper.
- Add the flour to a pie plate and add a little more salt & pepper.
- Combine the olive oil & Dijon mustard together in a small bowl or glass measuring cup and whisk until they have emulsified together and you can no longer see any olive oil.
- With a pastry brush, heavily coat one side of a pork chop with this mixture.
- Put the coated side down into the flour dish.
- Brush the other side with the oil/Dijon mixture and turn over to coat that side with flour.
- Gently shake off excess flour.
- Preheat a skillet with about 2 Tablespoons of oil. The meat should sizzle the moment it touches the pan. If using an electric skillet, cook the chops at 350 degrees for 7 minutes per side. They should be golden brown.
- Remove the pork chops to a plate and immediately tent with foil for at least 5 minutes. This will allow the chops to finish cooking while it retains lots of natural juices.
- Serve with mashed potatoes and your choice of side for a hearty meal.
