This is another favorite of my son’s. I can’t make it often enough to suit him. I have never been good at making scalloped potatoes, but this is just as tasty and much easier to make.

Cheesy Potato Casserole

Serves: 6-8
Ingredients
  • 30 ounces hash browns, frozen, shredded
  • 2 cups sour cream
  • 2 cups cheddar cheese, shredded
  • 1 family sized can cream of chicken soup, condensed
  • ½ cup onion, chopped
  • ¼ cup butter, melted
  • ½ teaspoon pepper
  • ¼ teaspoon salt
Instructions
  1. Make sure hashbrowns are completely thawed at room temperature.
  2. Add onions & butter together in a small bowl & microwave for 1 minute. This will precook the onion as it melts the butter.
  3. In a large bowl, combine all ingredients.
  4. Transfer to ungreased 2 qt. baking dish.
  5. Bake, uncovered, 350 degrees for 1 hour or until heated through.
