This is another favorite of my son’s. I can’t make it often enough to suit him. I have never been good at making scalloped potatoes, but this is just as tasty and much easier to make.
Cheesy Potato Casserole

Serves: 6-8
Ingredients
- 30 ounces hash browns, frozen, shredded
- 2 cups sour cream
- 2 cups cheddar cheese, shredded
- 1 family sized can cream of chicken soup, condensed
- ½ cup onion, chopped
- ¼ cup butter, melted
- ½ teaspoon pepper
- ¼ teaspoon salt
Instructions
- Make sure hashbrowns are completely thawed at room temperature.
- Add onions & butter together in a small bowl & microwave for 1 minute. This will precook the onion as it melts the butter.
- In a large bowl, combine all ingredients.
- Transfer to ungreased 2 qt. baking dish.
- Bake, uncovered, 350 degrees for 1 hour or until heated through.
