This dish is easy to make but packed with flavor. Poached chicken with a gravy made from cream of chicken soup served over rice. I use chicken thighs but you can substitute boneless breast meat if you prefer. I often use frozen chicken for this. Place the frozen chicken in a skillet with the broth, cover and heat over medium heat until chicken is cooked. It will take a few more minutes since the chicken will have to thaw out before it begins cooking.

Ingredients
- 6 boneless, skinless chicken thighs
- 2 small cans (10¾ oz.) condensed Cream of Chicken Soup
- 1 can (15½ oz) chicken broth
- Prepared rice
Instructions
- Prepare rice according to directions.
- Meanwhile, poach chicken thighs in a can chicken broth, in a covered skillet, until they are no longer pink. (10-15 minutes)
- Stir in Cream of Chicken Soup.
- Heat until soup is completely dissolved and smooth.
- Serve over rice.
