This dish is easy to make but packed with flavor.  Poached chicken with a gravy made from cream of chicken soup served over rice. I use chicken thighs but you can substitute boneless breast meat if you prefer.  I often use frozen chicken for this.  Place the frozen chicken in a skillet with the broth, cover and heat over medium heat until chicken is cooked. It will take a few more minutes since the chicken will have to thaw out before it begins cooking.

Ingredients
  • 6 boneless, skinless chicken thighs
  • 2 small cans (10¾ oz.) condensed Cream of Chicken Soup
  • 1 can (15½ oz) chicken broth
  • Prepared rice
Instructions
  1. Prepare rice according to directions.
  2. Meanwhile, poach chicken thighs in a can chicken broth, in a covered skillet, until they are no longer pink. (10-15 minutes)
  3. Stir in Cream of Chicken Soup.
  4. Heat until soup is completely dissolved and smooth.
  5. Serve over rice.
