This recipe was first created to use up my leftover chicken.  In a family of 4 with 3 preferring dark meat, I always have leftover white meat when we have chicken. With the addition of a cheesy sauce and some stuffing nobody seems to care that they are eating the white meat. Ah! Success!

Make the stuffing mix according to directions in the casserole dish.  Add the thawed broccoli around the edges.

Fill in the center with the chopped chicken.

Chicken & Broccoli Casserole

This is a great way to re-purpose leftover chicken. If you don't have any leftovers, just poach the chicken in some chicken broth until they are no longer pink inside.
Serves: 4
Ingredients
  • 2 - 3 cooked chicken breasts, diced
  • 1 pkg. Instant Stuffing Mix
  • 1 pkg. frozen broccoli florets
  • 1 small can Cream of Chicken Soup
  • 1 cup shredded cheddar cheese
Instructions
  1. Preheat oven to 350 degrees.
  2. Prepare the stuffing mix according to directions, right in the casserole dish that you will bake it in.
  3. Microwave the broccoli florets for a couple minutes just enough to defrost them.
  4. Line the outside edge of the dish with the broccoli.
  5. Fill in the center portion with the chicken.
  6. In a separate bowl, mix the soup & ½ can of milk until smooth.
  7. Add ½ C. shredded cheese to this mixture.
  8. Pour over the chicken
  9. Top with remaining cheese
  10. Bake about 30 minutes until bubbly.
