I first had this at my girlfriend’s house. It is a wonderful summertime meal when the green beans are at their best. Sometimes I go down to our local Saturday farmer’s market and get fresh vegetables for this. Delicious served with a pat of butter & a dollup of sour cream.
Green Beans with New Potatoes and Ham

The bacon will give it enough fat to soften the green beans. Ham is very lean so add it at the end so it does not get dried out.
Serves: 6-8
Ingredients
- 2 lbs. fresh green beans
- 1 lb. new potatoes
- 1 C. Diced onion
- 3 slices bacon, diced
- 1 lb. ham, diced in 1" chunks
- Salt & pepper
Instructions
- Wash green beans and snip off ends, then snap into 2 – 3 pieces.
- In a large pot render the fat on the bacon then add the chopped onions and sauté a couple minutes.
- Add the green beans & new potatoes.
- Add enough water to just cover everything.
- Bring to a boil, then reduce to a simmer and cook for about 20 minutes or until the potatoes are tender.
- Add the ham and cook another 5 minutes.
- Drain & place in a large platter, dot with butter, season with salt & pepper.
