In our household we love basil pesto.  In the summer we grow basil in whiskey barrels in our back yard. If you pinch off the top leaves it grows thick and bushy and will last all season.IMG_1742

Pesto is a very basic recipe.  You just throw all the ingredients into a food processor and blend until smooth.   You can use it as a pasta sauce, a pizza sauce and it is even really good as a sandwich spread. Its use is only limited by your own imagination.

Basil Pesto

Ingredients
  • 2 cups fresh basil
  • ¼ C. Pine nuts
  • 2 Garlic cloves, smashed
  • ⅔ C. Olive oil
  • ½ C. grated Parmesan cheese
  • Salt & pepper to taste
Instructions
  1. Combine all ingredients, except salt & pepper, in a food processor and blend until smooth.
  2. Add salt & pepper to taste.
Notes
If you plan on freezing a batch of this, leave out the parmesan cheese. Then when you thaw it out, add the parmesan cheese then.
